Chia seed pudding might just be the easiest healthy treat out there. Simply mix the ingredients, refrigerate, and enjoy.

For those just hopping on the chia seed train, let’s break down what this healthy little seed is all about. Full of vitamins, minerals, antioxidants, fiber and protein, chia seeds pack a nutritional punch that will keep you full, energized, and feeling good. This superfood also happens to be one of the best plant-based sources of omega-3s, the fatty acids that help reduce inflammation, build new cells, and prevent heart disease. Beyond their many health benefits, chia seeds have a unique super power; they can absorb up to 10 times their own weight in liquid (wild, right?). So, when you soak these little cuties, they expand, absorbing all the flavors and nutrients of the liquid and taking-on a pudding-like quality. And just like that, you have a healthy treat.

Chia seed pudding is vegan, gluten-free, and makes for a great power breakfast, delicious snack, or decadent dessert (satisfy chocolate cravings, no matter when they strike).

One of best things about this recipe is how versatile it is. Customize it with your favorite your nut butter, plant-based milk, and tasty toppings, add protein powder, or even omit the nut butter altogether for pure chocolate goodness (I see you chocolate lovers!). Make it your own, and enjoy!

Ingredients

Recipe yields two servings.

  • 1 cup unsweetened, unflavored plant-based milk (I use almond milk or cashew milk)

  • 1/4 cup chia seeds

  • 2 and 1/2 teaspoons regular or dark cocoa powder, unsweetened

  • 1 teaspoon vanilla extract or 1 tablespoon vanilla protein powder

  • 2 heaping tablespoons nut butter (I use peanut butter or almond butter)

  • 1 tablespoon honey

  • Pinch of cinnamon


Instructions

  1. In a medium bowl, combine all ingredients, whisking until fully combined. You can leave the mixture your bowl, or pour it into smaller, individual-sized serving containers.

  2. Cover mixture and place in refrigerator for a minimum of 3 hours. I typically make this recipe in the evening and let it sit overnight.

  3. Remove from refrigerator and serve with any desired toppings (sliced banana, berries, almonds, more nut butter, cocao nibs, etc.).


Recipe Notes

  • Weck “tulip” jars are the perfect size for chia seed pudding, and can be found at Cost Plus World Market for $3-$4.

  • It will be easier to mix your nut butter into the rest of your ingredients if it is warmed or at room temperature.
