Cinnamon Maple Pecan Granola

If you’re a granola lover and have never tried making it, this is the recipe for you! I’m confident you’ll have a delicious epiphany when you see just how easy it is, not to mention how much better and fresher it tastes than store-bought granola.

This recipe is one of the most functional on my blog, with so much all-natural, wholesome goodness packed into every dreamy cluster. From the heart-healthy oats and olive oil, to the antioxidant rich pumpkin and chia seeds, anti-inflammatory cinnamon, and protein-rich nuts, this is an recipe you can feel really good about. Not to mention, it features everyone’s favorite fall spices - cinnamon and nutmeg - for a sublimely comforting, irresistible flavor that’s delicious year-round.

Enjoy a handful on its own, sprinkle some on top of yogurt or a smoothie bowl for a power breakfast, or give it as a gift to friends and family. The options are endless!


Ingredients

  • 3 cups old-fashioned oats

  • 1 cup chopped pecans

  • 1/2 cup sliced almonds

  • 1/2 cup raw pumpkin seeds

  • 1 cup sweetened flaked coconut

  • 1/3 cup packed brown sugar

  • 2 teaspoons cinnamon

  • 1 teaspoon salt

  • 2 tablespoons chia seeds (optional)

  • 1/4 cup + 1 tablespoon olive oil

  • 1/4 cup + 2 tablespoons maple syrup


Instructions

  1. Preheat oven to 325 degrees.

  2. In a large bowl, mix together all dry ingredients (oats, nuts, pumpkin seeds, shredded coconut, brown sugar, cinnamon, salt, and chia seeds).

  3. Add wet ingredients (olive oil and maple syrup) to your dry ingredients, then thoroughly mix. I use my hands for this step to ensure all dry ingredients get evenly coated.

  4. Line two baking sheets with parchment paper or a Siplat silicon baking sheet. Pour 1/2 the granola into the center of each baking sheet, and spread evenly.

  5. Bake for 10 minutes, then remove from the oven. Using a spatula, mix the granola on each baking sheet, then re-spread into an even layer. Place granola back in the oven and bake for another 13 minutes.

  6. Remove granola from oven and cool for 30-45 minutes.

  7. Using your hands, break the granola into small clusters.


Recipe Notes

  • The granola tastes best if enjoyed within 1-2 weeks. Store in an airtight container at room temperature to maintain freshness.

  • Homemade granola makes a great gift! Simply fill a mason jar or Tupperware and add a cute ribbon.
